When we came to this wonderful country, we were received with open arms – and we’re happy here. We wanted to put something in our restaurant that would symbolize Texas and the United States, and found this hundred year old barn in Bastrop. We carefully collected memorabilia from all over Italy that would depict the last hundred years of our country. Many of these items have something to do with the United States – recollecting good times past and even sometimes those that weren’t so good!! Our emblem is a blend of Texas, American, and Italian flags. The name “Cavatore” and its coat of arms is over 800 years old and comes from a small medieval village in northern Italy, near Acqui, in Piemonte; land of the famous Barolo, Barbera, and Dolcetto d’Alba wines, truffles, and of course, fantastic food…
